Betty's Blueberry Ice Cream

Ingredients

  • 2 pint fresh blueberries
  • 1 cup sugar
  • 1/8 teaspoon salt
  • 2 cup heavy cream, lightly whipped
  • 1 cup evaporated milk

Instructions

  1. Mash berries and cook with sugar, on medium heat, stirring constantly, for 5 minutes.
     
  2. Press berries through a sieve. Cool.
     
  3. Add salt, lightly whipped cream and evaporated milk to the berries.
     
  4. Churn-freeze in an ice cream machine according to manufacturer instructions.
