Bananas Baked with Custard
Ingredients
- 1 tsp butter
- 4 bananas
- 6 thin slices buttered bread
- 1/4 cup raisins
- 2 1/2 cup milk
- 2 whole eggs plus 2 yolks
- 2 Tbsp soft brown sugar
- 1/2 tsp grated nutmeg
Instructions
Grease a medium-sized baking dish with the butter. Peel the bananas and slice into rounds. Halve the bread slices. Put layers of the bread, bananas and raisins in the dish ending with a layer of bread. In a pan heat the milk over a moderate heat. Beat the eggs and sugar together. Slowly pour in the milk, stirring continuously. Pour the milk-egg mixture into the baking dish and leave to stand 30 minutes. Dust the top with nutmeg and bake at 190 C for 30 minutes. Serve hot or cold.
