Diabetic, Low fat Fruit in Raspberry Grand Marnier Sauce
Ingredients
- 2/3 cup fresh raspberries
- 1 Tbsp plus 1 tsp. orange juice
- 2 teaspoons lemon juice
- 1/8 teaspoon orange rind, grated
- 1 cup strawberries, sliced
- 1 cup green grapes
- 2 teaspoons Grand Marnier
- 2 teaspoons sugar
Instructions
Puree the raspberries in the blender, using a little water if necessary. Strain to remove any seeds. Add the orange juice, lemon juice, and orange rind to the puree. Toss the strawberries and grapes with the Grand Marnier and sugar. Let marinate for 1 hour. To serve, place the strawberries and grapes in 4 individual dessert dishes. Pour equal portions of raspberry sauce on top. Makes 4 servings.
