Fruit Tzimmes Compote

Ingredients

  • 1 pound prunes
  • 1/2 pound dried apricots
  • 1/2 pound dried pears or apples
  • 2 cup water
  • 2 tbs honey
  • 3 tbs brown sugar
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 pound sweet potatoes, peeled and sliced

Instructions

In a large mixing bowl, presoak all the fruit overnight. Drain the water. Pit the prunes. In a medium sized saucepan combine all the ingredients and bring to a boil. Cook over very low heat for 25 minutes or until the liquid is absorbed. Stir occasionally. Serves 8 or more.
