Gingered Pear Compote
Ingredients
- 2 cups water
- 2 cups sugar
- zest of 1 fresh lemon
- 1 teaspoon ground ginger
- 6 Bartlett or Bosc pears, peeled and quartered
- 3 tablespoons chopped pistachio nuts
Instructions
Combine water, sugar, lemon rind, and ginger. Bring to boil and cook for 4 minutes. Remove lemon rind. Add pears, a few at a time. Poach until pears are transparent. Do not overcook. Place pears in glass-serving dish and pour hot syrup over fruit. Chill. Before serving, sprinkle with pistachio nuts. Makes 4 servings.
