Gingered Bananas
Ingredients
- 2 very ripe bananas
- 1 Tbsp fresh grated ginger
- 1 Tbsp brown sugar
- dash nutmeg
- 1 Tbsp butter or 1/2 tsp Butter Buds powder
- 2 Tbsp rum
Instructions
Mash the bananas very well. Mix all the ingredients and cook over hight heat, constantly stirring, until enough moisture cooks away for it to get thick. Note: This can be used as a spread for toast, a pudding, or a condiment for curries. This is an unusual recipe for those one or two leftover bananas which are getting too ripe.
