Individual Frozen Fruit Salads

This simple fruit salad recipe basically tastes like a popsicle and looks gorgeous as a treat at the end of a summer meal. You can substitute the fruits in the recipe for your favorites if you so desire, but this combination of berries, pineapples, peaches, and more has the perfect balance of tart and sweet. This is a particularly great fruit salad recipe for an outdoor dinner (as long as you're close to a freezer!) because it's portable and refreshing.

Ingredients
- 1/2 cup water
- 1/2 cup sugar
- 1 ounce thawed frozen orange juice concentrate
- Juice from 1 lemon
- 1 (16-ounce) package frozen mixed berries, partially thawed
- 1 (15-ounce) can sliced peaches, drained and chopped
- 1 large banana (or 2 small bananas), sliced
Instructions

Line 12 muffin cups with paper liners and set aside.

In a small saucepan, combine water and sugar. Boil for 3-4 minutes, whisking regularly to dissolve the sugar.

Add orange juice concentrate and lemon juice. Stir to combine.

Meanwhile, combine undrained berries, pineapple, peaches, and bananas in a large bowl.

Pour water mixture over the fruit and gently stir to coat.

Spoon fruit and liquid into paper-lined muffin cups.

Freeze until firm. You can then remove the fruit cups from the muffin tins, discard the paper liners, and store the frozen fruit cups in a large zip-top bag in the freezer.

When ready to serve, let stand at room temperature for 10 to 15 minutes (or until slightly thawed) before serving.
