Baked German Pancake

Ingredients

  • 3 large eggs
  • 1 cup milk
  • 3/4 cup flour
  • 1 tsp vanilla
  • 7 Tbsp butter or oleo
  • 1/8 tsp nutmeg
  • 1/2 tsp salt (opt)
  • 3 or 4 tart apples
  • 2 Tbsp sugar
  • 1 tsp cinnamon

Instructions

Preheat oven to 425 degrees fahrenheit. Put eggs and milk in a blender and mix. With the blender running, slowly add flour and salt. Add vanilla and nutmeg. Mix until mixture is smooth and uniform. Melt 3 Tbsp of butter in a cast iron skillet. Pour egg mixture into skillet and bakein the oven at 425 degrees F for 20 minutes or until golden brown at the edges and firm in the center. While the pan is in the oven, melt the remaining butter in a skillet. Peel, core and slice the apples. Fry the slices in the butter until softened. Sprinkle with sugar and cinnamon to form a compote. Serve hot apple compote over pancake. You may like other fruit, maple syrup, or ... on the pancake rather than the apple stuff.
