Hoppel Poppel

Ingredients

  • 1/2 pound bacon, chopped
  • 3 pound red potatoes
  • 1 medium onion, chopped
  • 6 eggs
  • 2 tablespoon milk
  • salt and black pepper
  • paprika
  • 2 tablespoon chopped parsley

Instructions

Fry bacon until crisp, remove to plate. Reserve fat. Boil potatoes; cool and coarsely dice. Fry in bacon fat until browned on both sides; lower heat. Add onions. Lightly beat eggs with milk. Pour over potatoes. Season with salt, pepper and paprika. Cook until egg mixture sets. Slice into wedges. Serve with catsup. Garnish with parsley if desired.
