Sauerkraut Salad
Ingredients
- 300g (10-1/2 oz) Sauerkraut
- 4 tbsp rapeseed oil
- 4 tbsp walnut oil
- 4 tbsp cider vinegar
- 2 dessert apples
- 60 grams (4 strips) bacon
- one bunch chives
- salt, pepper, pinch of sugar
- 50 grams (1/4 C) shelled walnuts to decorate
Instructions
Ingredients. Finely chop Sauerkraut. Place in saucepan and heat gently. Remove from heat and drain. Remove core from apples and slice finely into strips. Whisk oils, vinegar, salt, pepper and sugar together to make dressing. Combine apples and drained Sauerkraut together and mix well with dressing. Chop bacon finely and fry until crisp. Drain and sprinkle over salad. Finely chop chives and sprinkle over salad. Garnish with walnuts to taste.
