    Greek Onion Soup

    Ingredients

    • 2 Tbsp olive oil
    • 2 onions, chopped
    • 2 garlic cloves, chopped
    • 1 potato, chopped
    • 1 tsp salt
    • pinch ground black pepper
    • a few bay leaves
    • 1/2 tsp marjoram
    • 1 cup yogurt
    • 2 pints stock
    • 1 Tbsp chopped parsley

    Instructions

    Yield: 4 servings. Heat oil in a pot and gently fry the onion for 2 minutes. Add garlic, potato and seasonings. Stir together. Add yogurt and mix well. Pour in stock. Bring to a boil, cover and simmer for 20 minutes. Serves 4 Garnish with chopped parsley.
