Ingredients
- Brined the chicken over several hours and then used a modest rub.
- The trick with this technique, known as chicken on a throne, is to
- sit the bird on an open can of beer. Half the beer gets mixed into
- a mop with some leftover rub and a little oil. The rest stays in
- the beer can -- you cut off the top of the can -- along with a
- chunk of onion and some more rub and a bit of cider vinegar.
Instructions
The deal is, the beer/seasoning mixture keeps the bird moist on the inside. You splash on a little mop from time to time, and cook the birds for about 3 hours. The skin is a write-off -- gets really tough -- but the birds are so full of flavor it's incredible. Meat falls off the bone. With two birds available for dinner, the other two went whole into the freezer. A simple matter to thaw one, bone it (easiest boning job ever) and toss the chopped meat into a cold pasta salad or a sandwich. Stick with the hickory.

I don't care for beer seasoning so when my son told me about this he is a fantastic cook as well as cabinet-maker I opted for a can Fresca I don't cut off the top of the can I empty half the Fresca in a glass of ice for me to drink while I finish my chicken I put in about tsp frozen orange juice concentrate and tsp Adams Butter Flavoring Then I spray the outside of the can with pan spray it will stick to the chicken if you don't I have loosened the skin of the chicken by carefully running my hand between the skin and flesh starting at the neck cavity and opening up the area so I can put some seasoning in I mix a tad of salt and pepper with some butter that is just soft and rub it inside the chicken between the skin and…Read More flesh No need to bast the chicken except once halfway through cooking There will be juice in the pan from the chicken and the boiling Fresca in the can and you can mop it ot siphoin it with a baster and moisten the chicken I bake it at F for about to hours till juices are clear and leg and thigh move around freely I use large fryers instead of hens because the stores only have fryers that are over lbs now I get a to lb fryer and that is a good size to serve or people The citrus juices and the Fresca make the bird very tender You can use beer Coca-Cola anything you want You could even save cans and wash them and pour soe wine in it Use your imagination You can also buy little racks to set the cans in I have several of those as I do several chickens at the same time and freez them for future meals in my Vacuum Sealer It takes the same amount of electricity to sook or more as it does to cook one and I have several meals made ahead
