Grilled Marinated Beef with Caramelized Onions

Ingredients
- 2 pound flank steak
- salt and pepper
- 2 Tbsp. soy sauce
- 2 Tbsp. Dijon mustard
- 3 Tbsp. brown sugar
- 2 tea. curry powder
- 1 Tbsp. olive oil
- 1 Tbsp. butter
- 2 large onions sliced into thin rounds
- 5 Tbsp. chicken stock
Instructions
Mix the marinade ingredients together in a large, shallow glass bowl. Gently score the flank steak and add to the marinade, cover, and let sit at room temperature for 1-2 hours. Fire up your grill and when it's ready remove the steak from the marinade and grill for about 5 minutes per side. Use the leftover marinade to baste. Heat the butter and oil in a heavy bottomed pan until they are almost smoking hot. Add the onions and saute until translucent, approximately 10 to 15 minutes. Add the brown sugar and stock, season with salt and pepper, reduce heat and simmer until all the liquid is absorbed. To Serve, slice steak into 1/4 inch pieces, top with onions and serve. Of course a hearty red wine goes great with this meal as well as side dishes like roasted potatoes and grilled veggies.
