Grilled Potatoes

Ingredients
- 1 pound new potatoes
- 2 tbsp olive oil
- 1-2 tsp coarse salt
- few cloves garlic
Instructions
Wood chips or grapevines for your smoker Take a sheet of foil at least twice as large as the potatoes will cover, place potatoes on the foil. Sprinkle the oil over the potatoes. You may mince the garlic and sprinkle over, or just put a whole head of garlic in with the potatoes. Fold the foil over the potatoes and crimp all the edges to form a sealed packet. Punch several small holes in the packet with an awl, large needle, (very carefully) the tines of a fork. Place the packet on the fire, barbecue, or in a smoker along with the wood chips. Smoke until potatoes are easily pierced with a fork. This is somewhat dependent on size, but 45 minutes is a good time to start testing. These disappear quickly. Please note amounts of oil and salt vary with taste. Rosemary or paprika or other herbs or spices can be added.
