Ingredients
- 2 1-lb turkey breasts
- 5 gallon water
- 1 1/2 pound powdered dextrose (brown sugar is great)
- 2 pound salt
- 1 pound prague powder# or 1 lb salt +1oz SODIUM NITRATE 1oz=4tsps
Instructions
Put turkey breasts into this solution for 4 days at 38-40 degrees. After it is cured take it out and wash well in cold water..Put in a smoker or gas grill at 130 degrees for 1 hr then raise temp to 140 degrees for 4 hrs. Turn up till 165 degrees and hold there till internal temp reaches 152 degrees. Remove from grill or smoker and cool till 100 degrees before putting in fridge.
