Ingredients

  • 2 cup sugar
  • 3/4 cup water
  • 1/2 cup light corn syrup
  • 1/2 cup cinnamon candies
  • 2 teaspoon red food coloring
  • 6 green apples

Instructions

  1. Line a baking sheet with parchment paper; spray parchment well with cooking spray. Set aside. 

  2. In a heavy-bottomed dutch oven, combine sugar, water, corn syrup, cinnamon candies and food coloring. 

  3. Bring to a boil over high heat.  Reduce heat to medium-high to maintain a boil.

  4. Insert candy thermometer and continue boiling until temperature reaches 310 degrees F.  This is a "hard crack" stage.

  5. Meanwhile, remove stems from apples and insert a wooden stick into the top of each apple. Set aside. 

  6. When mixture is ready, immediately remove from heat and allow bubbles to settle. Holding stick firmly, quickly dip apples in hot sugar mixture. Raise from the dip and allow some of the sugar to drip off.  Place on prepared baking sheet; allow to cool.
