Chocolate Buttercream Eggs

Ingredients

  • 1 stick butter (room temperature)
  • 1 teaspoon vanilla extract
  • 1 lb. powder sugar
  • 12 oz. bag chocolate chips

Instructions

Cream butter and vanilla in mixing bowl. Sift in sugar 1/3 at a time beating well after each addition until consistancy of pie crust. May take a little more or less than 1 lb of sugar. Take balls the size of a walnut and roll between hands and shape into eggs. Melt chocolate chips in glass bowl in microwave for about 2 minutes, stirring every 30 seconds. Dip eggs into chocolate and set on wax paper. Another thing I like to do is put about 1 tsp. peanut butter in center of buttercream to look like the yolk, before shaping into eggs.
