Christmas Confetti Squares
Ingredients
- 3 envelopes unflavored gelatin
- 2 cup low-cal cranberry juice cocktail
- 3 tablespoon sugar
- 1 envelope low calorie lime flavored gelatin, (4 serving)
- 2 cup boiling water
- 3 cup unsweetened pineapple juice
- 1 envelope from a 2 1/2 oz. package low-cal dessert topping mix
- 12 vanilla wafers, crushed
Instructions
Serves 9. Soften 1 envelope gelatin in cranberry juice. Add 1 tablespoon sugar. Stir over low heat until dissolved. Pour into 8 x 8 x 2-inch or 9 x 5 x 3-inch pan; chill until firm. Dissolve lime gelatin in boiling water. Pour into another pan of same size; chill until firm. Soften remaining unflavored gelatin in pineapple juice. Add remaining 2 tablespoons sugar. Dissolve over low heat. Chill until partially set. Prepare topping as directed on package; fold into pineapple gelatin. Cut cranberry and lime gelatin into 1/2-inch squares. Reserve 1 cup cubes. Fold remaining cubes in to topping mixture. Sprinkle wafer crumbs in bottom of 8 x 8 x 2-inch pan. Pour filling over. Chill until firm. Top with reserved cubes.
