Christmas Steamed Pudding

Ingredients

  • 1 cup beef suet, minced
  • 1 cup melted butter
  • 1/2 pound flour
  • 1/2 pound raisins
  • 1/2 pound currents
  • 5 ounce candied orange and lemon peel
  • 6 ounce brown sugar
  • 5 eggs, beaten
  • 4 ounce fine bread crumbs
  • 1 teaspoon salt
  • 4 ounce minced nuts
  • 1 ounce cinnamon
  • 1 ounce nutmeg
  • 1/2 ounce allspice
  • 1 cup rum

Instructions

Sift flour and spices together. Mix with suet. Stir in all other ingredients. Grease and flour a square of muslin. Turn out onto the muslin. Place in a pan of simmering water with a plate on the bottom. Simmer slowly for four hours. Remove pudding and sprinkle with sugar. Pour heated rum over the top and light.
