English Plum Pudding Aka Christmas Pudding with Hard Sauce
Ingredients
- 2 cups seedless raisins
- 3 cups currants
- 1/3 cup candied citron, chopped
- 1/3 cup candied orange peel, chopped
- 1/3 cup candied lemon peel, chopped
- 4 cups soft bread crumbs
- 1/4 c almonds, chopped and blanched
- 1 1/2 cup sugar
- 1 tsp nutmeg
- 1/4 tsp ginger
- 1 tsp cinnamon
- 1 cup ground suet
- 3/4 cup milk
- 2 eggs, well beaten
- 1/3 cup orange juice or 1/2 cup brandy
Instructions
Toss fruits, bread crumbs, nuts, sugar, and spices together. Put suet into a meat grinder and add to fruit mix. Stir in milk and eggs. Add juice and blend well. Pack into a well greased 2 quart casserole dish. Cover tightly. Place mold into a deep kettle and add hot water to half of the mold. Boil for 8 hours and add water as it boils away. You are creating a steamer when you do this Once the 8 hours have expired, remove the pudding from he kettle and let it set for 15 minutes. Loosen edges with a knife. Plunge it in and out of ice water to loosen it completely. Serve with Hard Sauce. HARD SAUCE 1/2 cup butter 2 cups confectioner's sugar 1 tsp sherry Cream together and chill.
