Italian Meatballs for an Army
This authentic Italian recipe serves 60 people, perfect for a graduation party or family gathering. With ten pounds of meat, your guests will never go hungry. These meatballs also only take a half hour to cook.

Ingredients
- 1 1/2 cup very finely chopped shallot
- 5 tablespoon garlic, very finely minced
- 15 tablespoon parsley, fresh and finely chopped
- 5 cup Progresson Italian bread crumbs
- 5 eggs, lightly whisked
- 2 1/2 cup cold water
- 10 tablespoon olive oil
- 4 tablespoon salt
- 1 1/4 teaspoon freshly ground pepper
- 1 1/4 teaspoon ground nutmeg
- 7 pound ground beef chuck
- 3 pound ground pork
- Flour
Instructions
- Preheat oven to 325 degrees F and combine first ten ingredients in blender.
- Puree and place meat in large bowl.
- Mix the beef and pork together by hand and add the puree to meat mixture; combine.
- Using a medium-sized ice cream scoop, scoop out meatballs.
- Form each ball by rolling in palm of hand until tight and solid. (Balls should smaller than tennis ball, larger than golf ball)
- Toss lightly in flour to coat and brown in olive oil.
- When meatballs are browned, remove from stovetop and place in oven and bake for 30 minutes.
- Add your favorite sauce and serve.
