Achiote Marinade

Ingredients

  • 1/4 cup anchiote paste
  • 2 cup orange juice
  • 1 tsp garlic, chopped
  • 1 Tbsp olive oil
  • 1 Tbsp brown sugar
  • 1 pinch ground cumin
  • 1 pinch ground coriander
  • 1 pinch oregano
  • salt and pepper, to taste

Instructions

Mix the marinade ingredients together. Marinate chicken, pork, fish, or seafood from 3 hours to overnight. Achiote Paste 2 tbsps annatto seeds 1 tsp cumin seeds 1 tsp oregano 6 allspice berries 1 tsp sea salt 4 garlic cloves, pressed 4 tbsps lime juice Combine the annatto seeds, cumin seeds, oregano, allspice berries, and salt in a spice mill or coffee grinder. Grind to a powderlike consistency. In a small bowl, mix the powder with the garlic and lime juice. Store in an airtight container, in the refrigerator. Use for Cochinita Pibil or any grilled seafood.
