Cumin Rub
Ingredients
- 3/4 cup ground cumin
- 1/4 cup ground coriander
- 1/2 cup hot chili powder
- 2 tablespoons paprika
- 1 tablespoon ground allspice
- 1/4 cup kosher salt
- 1 tablespoon cracked black pepper
Instructions
In a bowl combine the cumin, coriander, chili powder, paprika, allspice, salt, and pepper. Store the rub in a jar with a tight-fitting lid. Keep in a cool, dark place. Makes about 2 cups. Use this rub on pork or beef before grilling. First, coat the meat all over with olive oil, then add just enough of the rub to make a light sprinkling.
