Chimichurri

Ingredients

Instructions

In a half-liter bottle that closes tightly combine the following: 1/4 inch deep coarse salt 3/4 inch hot water Close bottle and shake. Add the following: 4 cloves garlic, finely minced 1 tablespoon oregano or basil 2 tablespoons paprika, both hot and sweet combined to taste 1 tablespoon mustard (normal or Dijon to taste) 1/2 teaspoon sugar 1 tablespoon tomato paste (not traditional) Close and shake again. Add the following: 3/4 inch vegetable oil 1/3 inch vinegar Close, shake and store. Reaches peak flavor after one week...keeps well for weeks.
