  • 1 pound ground beef
  • 1 onion, diced
  • 1 green pepper, diced
  • 1 can diced tomatoes, well drained
  • 1 egg
  • 1/2 cup frozen shredded hash browns
  • 1 teaspoon salt
  • 1/2 cup ketchup

Instructions

  1. Preheat oven to 350 degrees F.

  2. In a large bowl combine all of the ingredients, except the ketchup.

  3. Spray a sheet pan with cooking spray.  Place meat on the sheet pan and form into a loaf. Spread the ketchup on top of the loaf.

  4. Bake the meatloaf in the preheated 350 degree F oven for 55-60 minutes or until cooked through.

  5. Remove from the oven and let rest for 10 minutes.

  6. Transfer the meatloaf to serving platter and slice.
