This easy freezer meatloaf is the perfect recipe for busy weeknights. All you have to do is make this meal when you have some spare time, and then you’re only an hour away from a hearty meal that the whole family will love. As a bonus, that hour of cooking time is completely hands off, leaving you time to do whatever else you need to do in the kitchen. Make ahead meals don’t get much better or easier than this freezer meatloaf. We love that it’s made in mini loaves, which are easy to store in your freezer. They also make the presentation all that much more fun!

Ingredients
- 1 1/2 pound ground beef
- 1/2 pound ground pork
- 1 onion, chopped
- 1 1/2 cup bread crumbs
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1/8 teaspoon ginger
- 1 teaspoon kosher salt
- 1/4 teaspoon pepper
- 3 eggs
- 3 tablespoon apple cider vinegar
- 4 tablespoon dark brown sugar
- 1/2 cup ketchup
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dry mustard
You will need 4 mini loaf pans with lids for this recipe.
Directions

In a large mixing bowl combine the beef, pork, onion, bread crumbs, nutmeg, allspice, ginger, salt, pepper and eggs. Mix well.

Lightly spray the mini loaf pans with cooking spray. Divide the meat loaf mixture evenly between the four loaf pans leaving room at the top for the sauce.

In a small bowl combine the apple cider vinegar, brown sugar, ketchup, Worcestershire sauce and dry mustard. Mix well and evenly divide the sauce on top of each meatloaf.

Cover each mini loaf pan with the lid and be sure to mark the contents and date when made. You may want to cover each in foil as added protection from the freezer.

You can bake right away in a 350 degree oven for 35-50 minutes (do not leave the plastic lid on). If taking from the freezer, bake for 60-80 minutes.
