- 1 pound ground beef
- 1 cup dry Italian breadcrumbs
- 1 small onion, diced
- 1 cup Parmesan cheese
- 1 clove garlic, minced
- 1/4 cup chives
- 1 teaspoon salt
- 1 teaspoon pepper

To prepare the meatballs, crumble the beef and gently combine breadcrumbs, parmesan, garlic, onion, chives, salt, and pepper.

Use an ice cream scooper to form 2 inch meatballs and place on a foil lined baking sheet. Tip: Dip scooper into a cup of clean water in between use.
