Ingredients
- 1 tablespoon olive oil
- 1 ounce green bell peppers
- 1 ounce onion
- 18 ounce turkey breast
- 1 teaspoon smoked paprika (spices)
- 1 teaspoon ground cumin (spices)
- 1 teaspoon dried oregano (spices)
- 4 medium flour tortillas
- 2 cup shredded Monterey jack
- 2 cup shredded cheddar
- 2 green onions, thinly sliced
- Sour cream, for serving
- Salt and pepper to taste
- 1 cup chicken stock
Instructions

In a large skillet over medium-high heat, add olive oil.

Add chopped peppers and minced onion.

Cook until soft for 5 minutes. Set aside to cool.

Sauté chopped turkey breast.

Add stock, spices, and simmer for 15 minutes.

Season with salt and pepper. Set aside to cool.

Add 1 flour tortilla to skillet.
