Burritos

Ingredients

  • 2 chicken breasts (skinned and boned)
  • 1 green pepper
  • 1 onion
  • 1 clove garlic
  • 1/2 cup V-8 or tomato juice
  • 1 can red kidney beans
  • 4 large flour tortillas
  • 1/2 cup low fat mozzarella cheese ground
  • cumin seeds
  • salt to taste
  • low fat guacamole
  • 1 mashed avocado
  • 1 whole fresh lime
  • 1 diced tomato
  • 1/2 cup fat free sour cream or yogurt
  • 1/2 clove of minced garlic

Instructions

Dice the chicken,the pepper, the onion and the garlic; mix with the V-8; simmer at medium to low temperature in a cooking pot. Add ground cumin seeds and salt to taste.When all the cooking juice has almost evaporated add in the rinsed kidney beans. Separate this mixture into four equal servings and fill each tortilla; add the cheese before rolling up the tortillas. Serve with rice and guacamole.
