Baked Potato Taco Boats

Your kids will look forward to this meal every time you make it. Enjoy your favorite taco meat inside a baked potato "shell," and get creative with the rest! Fill the shell up with everything you love most about tacos. Just make sure you don't leave out the shredded cheese and sour cream because, if you're like us, you think those are some of the best parts of a delicious taco meal!
Ingredients
- 3 baked potatoes, cooled
- 1 1/2 cup prepared taco meat of your choice
- 3/4 cup shredded Mexican blend Cheddar cheese
- 1/2 cup sour cream
- 1/2 cup shredded Mozzarella cheese
- Optional Garnish
- diced tomatoes
- shredded lettuce

Instructions

Preheat your oven to 350 degrees F.

Cut potatoes in half lengthwise and remove most of the insides, reserving them in a bowl.

Add the removed potato to the taco meat. Add Mexican cheese and sour cream. Stir well to combine.

Divide among the potato boats and top with the mozzarella cheese.

Bake in the oven until heated through and cheese is bubbly and lightly golden.
