Pan de Polvo

Ingredients

  • 4 pounds flour
  • 2 tsps salt
  • 2 TBS gound cinnamon
  • 2 cups sugar
  • 3 pounds (1 large can) shortening
  • 8 eggs
  • 4 cups sugar
  • 2 TBS ground cinnamon

Instructions

Preheat oven to 350 degreesF. In a very large bowl, mix 4 lb flour, 2 tsp salt, 2 TBS ground cinnamon, and 2 cups sugar. Add 3 lb shortening and mix well. Add 8 eggs , mix thoroughly. Drop by spoonfuls (about the size of a melon-baller) on ungreased cookie sheets. Bake 15-20 minutes. Do not overbake. mix the 4 cups sugar with the 2 TBS ground cinnamon in a large bowl. After removing the cookies from the oven, let them rest for 5 minutes, then dredge them in the cinnamon-sugar mix. Coat them completely then transfer to covered storage containers. This makes a LOT of cookies!
