Minted Lamb (microwave 650 Watts)
Ingredients
- 2 onions
- 2 sticks celery
- 1/2 cup pineapple pieces
- 800g lamb leg chops
- 4 Tbs flour
- 1/2 cup mint sauce
- 2 Tbs soy sauce
- 3 tsps gravy browning
- 1/4 cup pineapple juice
- salt and pepper
- juice of 1 lemon
Instructions
Slice onions and celery, Combine in a flat cooking dish. Cook covered on HIGH 4 mins. Add pineapple pieces. Trim excess fat from chops and arrange in a single layer over vegetables. Combine flour with all remaining ingredients. Pour over meat. Cook, covered HIGH power 3 mins., then MED. LOW (50%) 18-20 mins. Rearrange once during cooking. Stand, covered 15-20 mins. Serves 4.
