- 1 1/2 cup sugar
- 1/3 cup cornstarch
- 1 1/2 cup water
- 3 egg yolks, beaten
- 3 tablespoons butter
- 1/2 cup lemon juice
- 1 teaspoon grated lemon peel
- 1 (9-inch) pie crust, baked
Instructions
- Mix sugar and cornstarch thoroughly in a 1-quart glass measuring bowl. Stir in water and cook on high in microwave for 2 1/2 minutes. Stir, then continue cooking 1 minute on high, or until thick, stirring every 30 seconds.
- Beat small amount of hot mixture into egg yolks, then pour the egg yolk mixture into the glass measuring bowl. Cook in microwave on high for 30 seconds.
- Stir butter, lemon juice, and lemon peel into the mixture. Cool, then pour into baked pie shell.
- Cover with meringue and brown top under a broiler in the oven for a few minutes.
