Microwave Yogurt

- 4 cup milk
- 2 tablespoon yogurt with live active cultures
Instructions
You'll need a thermometer once or twice to determine your microwave's heating capability. Pour milk into a large glass bowl or pyrex type measuring cup. Heat the milk in the microwave until it reaches 160 degrees. This takes 9 minutes on high for me. The temperature of the milk has a bearing upon the end result--tanginess, mildness. This is where I like it. Let the milk cool until warmish. This isn't such a precise operation. Stir in the yogurt. Use a whisk. it's easy. You don't want to kill the live cultures by overheating. Cover this bowl with plastic wrap and wrap up well with a clean tea towel. Keep it in the microwave and every 30 minutes or so, zap it on low for about 30 secs. In about 4 hours you'll have yogurt. If you do this in the evening and don't open the microwave, it acts like a proofing box and you'll have yogurt in the morning.
