Mint Marinade for Chicken and Grilled Potatoes
Ingredients
- 4 sprigs fresh mint
- 4 TBSP light soy sauce
- 3 TBSP brown sugar
- 2 TBSP Red wine vinegar
- 2 TBSP lemon juice
- 1/2 TBSP Olive oil
- 1 tsp Garlic salt
- 1 tsp black pepper
- 1 tsp white sugar
Instructions
Mix all ingredients. Use to marinate chicken for 1-2 hours or longer if you prefer. Also works well to marinate baked potatoes. Grill potatoes about 20 minutes or until crisp and hot. Variation: Microwave marinade 4 minutes until comes to a full boil for at least a minute. Use boiled marinade to baste kabobs during cooking. Notes: Yield: enough for 4-6 chicken breasts
