Quick Eggplant Noodles
The microwave helps this quick recipe for supper cook up in no time at all. Eggplant and rice noodles add a deep richness to this cheap quick easy dinner recipe.

Ingredients
- 2 ounces rice noodles
- 1 small eggplant
- 1/4 sweet red bell pepper (optional)
- Celery salt
- Black pepper
- Dried basil
- Garlic powder
- 14 ounces can chopped tomatoes
Instructions
- Cook the noodles according to pack directions, then drain.
- Chop the eggplant into 1/2-inch cubes. Deseed and chop the red pepper.
- Mix eggplant and red pepper in a microwavable bowl, season with celery salt, black pepper, dried basil and garlic powder to taste, then mix again. Spread the tomatoes on top and then the noodles.
- Microwave on high until vegetables are done, about 8 minutes. Extra liquid will evaporate but the noodles shouldn't become overdone. Mix well and serve.
