For quick and easy meatball recipe goodness, Rick's Italian meatballs can't be beat. Mix 'em up, nuke 'em, and you're all set. Microwave recipes make dinner a breeze!

Ingredients

1 pound ground chuck
2 eggs
1/4 cup ketchup
1/4 can Parmesan cheese
1 teaspoon oregano
1 teaspoon black pepper
1 teaspoon Italian seasonings
1 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon cayenne red pepper (optional)
1 cup Italian breadcrumbs

Instructions

Mix eggs, seasonings, catsup together and then mix in Parmesan cheese.
Blend seasoning mix thoroughly with meat and then add bread crumbs and form meatballs — about 1 1/2-inch size. Makes about 10-12 depending on size.
Cook in microwave 4 minutes and then turn over and cook another 4 minutes in microwave.
Eat and enjoy. Freeze any extras and reheat in microwave as needed.
