Armenian Salad
Ingredients
- 3 cucumbers, peeled and cut in 1/2 " cubes
- 16 red radishes, sliced
- 1 cup chopped celery
- 16 black olives, especially Greek Kalamata olives
- 3 Tbsp pistachio nuts, chopped (or walnuts)
- 1/2 cup olive oil
- 1 cup vinegar
- 2 Tbsp lemon juice
- 1 teaspoon salt
Instructions
Mix the dressing and toss with the salad. Chill before serving.
