Homemade Couscous
Ingredients
- 28 oz.s regular Cream of Wheat or 4 1/2 cups semolina
- water
Instructions
Pour 1/2 cup of the cereal or flour into a wide, shallow bowl. Add a scant 2 tablespoons water. With fingertips, stir the cereal around the bowl. If the mixture is too dry or doesn't roll into pellets, add another tablespoon of water. When pellets the size of peppercorns are formed, pour the mixture through a sieve with holes smaller than the peppercorns onto a tray. Tip the mixture that fell through the colander back into the bowl. Place the pellets left in the colander on a clean dish towel. Repeat, adding cereal and water in the same proportions, until nothing's left to fall through the colander. Use the couscous right away or let it dry, then store in an airtight container.
