Middle Eastern Orange and Almond Cake
Ingredients
- 2 large oranges
- 6 eggs
- 8 ounces ground almonds
- 8 ounces sugar
- 1 tsp baking powder
Instructions
flourless, gluten-free. Wash and boil oranges (unpeeled) in a little water for about an hour. Allow to cool, then cut open and remove pips. Pulp by rubbing through a seive or whizzing in a blender. Beat eggs, add all other ingredeients, mix thoroughly and pour into a buttered cake tin, preferably one with a removable base. Bake 190deg C or 375deg F or gas 5 for about an hour, or a liitle longer if still very wet.
