Sweet & Sour Glazed Cornish Hens
Ingredients
- 4 Cornish game hens
- 1/2 cup unsalted butter
- 1/4 cup white wine
- Salt and pepper to taste
- 1 cup currant jelly
- 1 1/2 tablespoon hot prepared mustard
- 1/2 teaspoon crushed rosemary
- 1 tablespoon lemon juice
Instructions
Servings: 4. Preheat oven to 450 F. Rinse hens with cold water and pat dry with paper towels. Generously coat inside and out with mixture of melted butter and wine. Place on individual Cornish roasting racks sprinkle with salt and pepper. Place in roasting pan with 1 1/4 cups water. Roast at 450 F for 15 minutes; reduce temperature to 375 F and roast 30 minutes longer. Meanwhile, combine glaze sauce ingredients and heat until jelly melts. The last 10 minutes of cooking, brush hens with glaze sauce and brush again after cooking. Refrigerate leftovers.
