Blueberry Muffins

Ingredients

  • 1/2 cup butter, softened
  • 2 cup all-purpose flour
  • 1 cup sugar
  • 3 eggs
  • 1/2 cup milk
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 cup blueberries
  • 2 teaspoon sugar
  • 1 teaspoon vanilla extract

Instructions

Preheat oven to 375 degrees, lightly oil muffin tins and lightly dust blueberries with flour. On low speed of an electric mixer, cream butter and sugar until fluffy. Add eggs, on at a time, and mix until blended. Sift dry ingredients and add alternately with milk. Add vanilla. Mash 1/2 cup blueberries and stir in by hand. Fold in remaining whole berries. Fill muffin tins 2/3 full, sprinkle with 2 tablespoons sugar and bake 30 minutes.
