Carrot and Raisin Muffins
Ingredients
- 1 cup bran
- 3/4 cup flour
- 1 tsp baking soda
- 1 Tbsp golden syrup
- 1 egg
- 1 small carrot
- 1/4 tsp salt
- 1/4 cup cottage cheese
- 1/4 cup raisins
- 1/2 cup sugar
- 3/4 cup milk
Instructions
Place bran, milk, golden syrup and egg into a mixing bowl. Peel and grate carrot and add with cottage cheese and raisins. Leave to stand for 5 minutes. Add flour, sugar, b/soda and salt. Mix until just combined. 3/4 fill greased muffin pans and bake at 350F for 20 minutes or until well-risen and golden. Makes 9.
