Cherry Blintzes
Ingredients
- Crepes
- 1 cup dry cottage cheese
- 1/2 cup dairy sour cream
- 2 tbsp sugar
- 1 tsp vanilla
- 1/2 tsp grated lemon peel
- 1/4 cup margarine or butter
- 1 cup dairy sour cream
- 1 can ((21 ounce) cherry pie filling
Instructions
Prepare Crepes except-brown only one side. Cool, keeping crepes covered to prevent them from drying out. Mix cottage cheese, 1/2 sour cream, the sugar, vanilla and lemon peel. Spoon about 1 1/2 tbsp of the cheese mixture onto browned side of each crepe. Fold sides of crepe up over filling, overlapping edges; roll up.
