Wholesome Apple Pancakes
Wholesome Apple Pancakes are a quick breakfast recipe for kids or parents, alike. The warm comfort of pancakes and apples will brighten everyone's morning.
Ingredients
- 1 medium apple, cored and chopped
- 1 1/3 cup milk
- 1 egg
- 1/2 teaspoon cinnamon
- 2 cup baking mix
- 1 cup sugar
- 2 tablespoon cornstarch
- 2 cup apple juice
- 2 tablespoon lemon juice
- 1/4 cup butter
Instructions
- In a blender, puree the apple, milk, egg and cinnamon; add baking mix.
- Fry on a hot, lightly-oiled griddle.
- Served with apple syrup.
- Mix sugar and cornstarch in a saucepan, add juices.
- Cook, stirring constantly, until mixture thickens and boils.
- Boil and stir 1 minute.
- Remove from heat; blend in butter.
