Wholesome Apple Pancakes

Wholesome Apple Pancakes are a quick breakfast recipe for kids or parents, alike. The warm comfort of pancakes and apples will brighten everyone's morning.

Ingredients

  • 1 medium apple, cored and chopped
  • 1 1/3 cup milk
  • 1 egg
  • 1/2 teaspoon cinnamon
  • 2 cup baking mix
  • 1 cup sugar
  • 2 tablespoon cornstarch
  • 2 cup apple juice
  • 2 tablespoon lemon juice
  • 1/4 cup butter

Instructions

  1. In a blender, puree the apple, milk, egg and cinnamon; add baking mix.
     
  2. Fry on a hot, lightly-oiled griddle.
     
  3. Served with apple syrup.
     
  4. Mix sugar and cornstarch in a saucepan, add juices.
     
  5. Cook, stirring constantly, until mixture thickens and boils.
     
  6. Boil and stir 1 minute.
     
  7. Remove from heat; blend in butter.
