Sweet Pepper Sauce for Pasta

Ingredients

  • 1 onion, minced
  • 1 red pepper, diced
  • 2 plum tomatoes, diced
  • 1 Tbsp olive oil
  • 2 cup plum tomatoes, peeled, seeded and run through a food processor
  • salt and pepper
  • 1 tsp marjoram, minced

Instructions

Cook the onion, red pepper, and diced tomatoes in the oil in a 2-quart pot until soft, about 5 minutes. Stir in the pureed tomatoes, capers, salt and pepper; bring to a boil. Cook 15 minutes. Fold in the marjoram. Serve hot over pasta.
