Ingredients
- 1 pound mostaccioli noodles or rotini
- 2 small zucchini
- 2 small yellow squash
- 1/4 pound mushrooms, sliced, about 1 cup
- 1 small onion, halved, thinly sliced
- 1 medium green pepper, julienned 1 inch long
- 4 cup homemade meatless spaghetti sauce or one 32-ounce jar
- salt, to taste
- black pepper, freshly ground, to taste
- 1/2 pound mozzarella cheese, shredded
- 1/4 cup parmesan cheese, freshly grated
Instructions
- Preheat oven to 325 degrees F.
- Cook noodles according to package directions until al dente.
- Drain, rinse, drain again.
- Cut zucchini and yellow squash lengthwise into quarters. Then cut each quarter crosswise into 1/8 -inch thick slices.
- Mix cooked noodles, zucchini, squash, mushrooms, onion and green pepper in large bowl.
- Stir in spaghetti sauce, salt, and pepper.
- Transfer mixture to an oiled 13- by 9-inch baking pan.
- Top with cheeses.
- Bake at 325 degree F until hot and top is golden, 25 to 35 minutes.
