Beefy Baked Ziti with Peppers

Ingredients

  • 8 ounce extra lean ground beef
  • 3 cup green, red, and yellow bell pepper strips
  • 1 cup onion, sliced
  • 1 (26-ounce) jar pasta sauce
  • 1/4 cup Parmesan cheese, grated
  • 1 teaspoon dried oregano
  • 2 cup low-fat Mozzarella cheese
  • 3 cup cooked ziti or mostaccioli

Instructions

  1. Pre-heat the oven to 375 degrees F.
     
  2. In a large saucepan sprayed with non-stick cooking spray, brown the ground beef with the bell peppers and onions until the meat is browned and the peppers begin to soften. Drain.
     
  3. Return the pepper mixture to the saucepan and stir in the pasta sauce, 2 tablespoons Parmesan cheese, oregano, 1 cup mozzarella, and pasta.
     
  4. Spoon into a 13 x 9-inch baking dish. Sprinkle with the remaining mozzarella and Parmesan cheese.
     
  5. Bake, uncovered, 30 minutes or until hot and bubbly. Serve.
