Family Friendly Macaroni and Cheese

Ingredients
- 1 1/2 cup elbow macaroni
- 1/4 cup margarine or butter
- 1 small onion, chopped
- 1/4 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 3/4 cup milk
- 8 ounce sharp process American or Swiss Cheese
Instructions
- Preheat oven to 375 degrees F.
- Cook elbow macaroni according to package directions. Pour into colander and drain.
- Cook onion and stir over medium heat. Add in margarine or butter and onion. Cook until onion is slightly tender.
- Stir in all-purpose flour, salt and pepper.
- Cook over low heat, stirring all the time until mixture is smooth and bubbly.
- Remove from heat.
- Stir in milk. Heat to boiling, stirring all the time. Boil and stir 1 minute.
- Remove from heat.
- Cut sharp process American or Swiss Cheese into small cubes and stir into milk mixture until melted.
- Place drained macaroni in casserole.
- Stir cheese sauce into macaroni.
- Spray the dish with spray oil. Bake uncovered for 30 minutes.
