Ingredients

  • 2 cup flour, plus extra for rolling
  • 1 teaspoon kosher salt
  • 3 large eggs
  • 1 teaspoon olive oil
  • 1 teaspoon water

Instructions

  1. In a food processor fitted with the blade attachment combine the flour and salt. Pulse a few times to combine.
     

  2. Add the eggs, olive oil and water to the flour mixture and process for 30-60 seconds. 
     

  3. If the mixture appears dry add a bit more water until the dough comes together in a ball.
     

  4. On a lightly floured surface knead the dough until smooth.
     

  5. Place in a bowl and cover with plastic wrap. Rest at room temperature for at least 30 minutes.
     

  6. On a floured work surface roll the dough out as thinly as you can.
     

  7. Using a very sharp knife cut the dough into pasta noodles. Place the noodles onto a baking sheet lined with parchment paper and lightly floured.
     

  8. Cook the pasta in a large pot of salted boiling water for 2-3 minutes depending on the thickness of the noodles.
     

  9. Drain, dress per your preferences, and serve with your favorite sauce.
